Delicious Veggie Soup Recipes: 1 Hour Healthy Meal

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 8 cups vegetable broth
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • 2 cups chopped fresh spinach

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Pour in vegetable broth and diced tomatoes. Add cannellini beans and Italian seasoning.
  4. Bring to a boil, then reduce heat and simmer for at least 20 minutes, or until vegetables are tender.
  5. Stir in spinach and cook until wilted, about 2-3 minutes.
  6. Season with salt and pepper to taste.

Notes

  • For a thicker soup, mash some of the beans against the side of the pot.
  • Add other vegetables like potatoes, zucchini, or corn as desired.
  • Garnish with fresh parsley before serving.
