Ingredients

- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 8 cups vegetable broth
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can cannellini beans, rinsed and drained
- 1 teaspoon dried Italian seasoning
- Salt and black pepper to taste
- 2 cups chopped fresh spinach
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Pour in vegetable broth and diced tomatoes. Add cannellini beans and Italian seasoning.
- Bring to a boil, then reduce heat and simmer for at least 20 minutes, or until vegetables are tender.
- Stir in spinach and cook until wilted, about 2-3 minutes.
- Season with salt and pepper to taste.
Notes
- For a thicker soup, mash some of the beans against the side of the pot.
- Add other vegetables like potatoes, zucchini, or corn as desired.
- Garnish with fresh parsley before serving.
