- 4 large banana peels (from ripe but not overripe bananas)
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/2 cup barbecue sauce
- 2 tablespoons soy sauce
- 1 tablespoon apple cider vinegar
- 1 teaspoon smoked paprika
- 1/2 teaspoon liquid smoke (optional)
- Salt and black pepper to taste
Instructions
- Wash the banana peels thoroughly.
- Scrape out any white pith from the inside of the peels.
- Cut the peels into strips about 1/4 inch thick.
- Heat olive oil in a skillet over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Add the banana peel strips to the skillet.
- Cook, stirring occasionally, until the peels begin to soften and brown, about 10-15 minutes.
- Stir in barbecue sauce, soy sauce, apple cider vinegar, smoked paprika, and liquid smoke (if using).
- Bring to a simmer and cook for another 10-15 minutes, or until the banana peels are tender and have absorbed the sauce.
- Season with salt and pepper to taste.
- Serve hot on buns or as desired.
Notes
- Use bananas that are ripe but still firm. Overripe bananas can be too soft.
- Adjust barbecue sauce and seasonings to your preference.
- This recipe is great for sandwiches, tacos, or as a topping for salads.
