Ingredients

  • 4 large banana peels (from ripe but not overripe bananas)
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup barbecue sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon liquid smoke (optional)
  • Salt and black pepper to taste

Instructions

  1. Wash the banana peels thoroughly.
  2. Scrape out any white pith from the inside of the peels.
  3. Cut the peels into strips about 1/4 inch thick.
  4. Heat olive oil in a skillet over medium heat.
  5. Add onion and cook until softened, about 5 minutes.
  6. Add garlic and cook for 1 minute more until fragrant.
  7. Add the banana peel strips to the skillet.
  8. Cook, stirring occasionally, until the peels begin to soften and brown, about 10-15 minutes.
  9. Stir in barbecue sauce, soy sauce, apple cider vinegar, smoked paprika, and liquid smoke (if using).
  10. Bring to a simmer and cook for another 10-15 minutes, or until the banana peels are tender and have absorbed the sauce.
  11. Season with salt and pepper to taste.
  12. Serve hot on buns or as desired.

Notes

  • Use bananas that are ripe but still firm. Overripe bananas can be too soft.
