- 1 1/2 cups granulated sugar
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Vegan royal icing (for decoration)
- Vegan sprinkles (for decoration)
Instructions
- In a large bowl, cream together the softened vegan butter and granulated sugar until light and fluffy.
- Beat in the applesauce and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a soft dough forms. Do not overmix.
- Divide the dough in half, flatten into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes, or up to 2 hours.
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- On a lightly floured surface, roll out one disc of dough to about 1/4-inch thickness.
- Use Christmas-themed cookie cutters to cut out shapes. Carefully transfer the cookies to the prepared baking sheets.
- Bake for 8-10 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- Once completely cooled, decorate the cookies with vegan royal icing and sprinkles as desired.
- Allow the icing to set before storing the cookies in an airtight container.
Notes
- For best results, make sure your vegan butter is truly softened, not melted.
- Do not skip the chilling step; it helps prevent the cookies from spreading too much.
- If the dough becomes too warm while rolling, place it back in the refrigerator for a few minutes.
