Description

These easy tuna cakes are a quick and delicious meal, perfect for a weeknight dinner or a light lunch. Made with canned tuna, breadcrumbs, and a few simple seasonings, they are pan-fried to a golden crisp.


Ingredients

  • 2 (5 ounce) cans tuna, drained
  • 1/2 cup breadcrumbs
  • 1/4 cup mayonnaise
  • 1 large egg
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh parsley, chopped
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil, for frying

Instructions

  1. In a medium bowl, flake the drained tuna with a fork.
  2. Add the breadcrumbs, mayonnaise, egg, Dijon mustard, parsley, and black pepper to the bowl. Mix until well combined.
  3. Form the mixture into 4-6 patties.
  4. Heat the olive oil in a large non-stick skillet over medium heat.
  5. Carefully place the patties into the hot skillet. Cook for 3-4 minutes per side, or until golden brown and heated through.
  6. Serve immediately with your favorite dipping sauce or a squeeze of lemon.

Notes

  • For extra flavor, add a pinch of garlic powder or onion powder to the mixture.
  • If the mixture is too wet, add a little more breadcrumbs. If it’s too dry, add a touch more mayonnaise.
