Ingredients

  • 2 carrots, chopped

  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (or more, to taste)
  • 1 cup brown or green lentils, rinsed
  • 6 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chopped mixed vegetables (e.g., bell peppers, zucchini, spinach)
  • Salt and black pepper to taste
  • Fresh cilantro or parsley, for garnish (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  3. Stir in garlic, cumin, coriander, turmeric, and cayenne pepper. Cook for 1 minute until fragrant.
  4. Add rinsed lentils, vegetable broth, and diced tomatoes. Bring to a boil.
  5. Reduce heat, cover, and simmer for 25-30 minutes, or until lentils are tender.
  6. Stir in chopped mixed vegetables and cook for another 5-10 minutes, until tender.
  7. Season with salt and black pepper to taste.
  8. Serve hot, garnished with fresh cilantro or parsley if desired.

Notes

  • Adjust cayenne pepper for your desired level of spiciness.
  • Feel free to add other vegetables like potatoes, sweet potatoes, or kale.
