- 250g active sourdough starter
- 100g pumpkin puree
- 75g unsalted butter, melted
- 50g granulated sugar
- 50g brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 250g all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 50g chopped pecans or walnuts (optional)
Instructions
- In a large bowl, whisk together the active sourdough starter, pumpkin puree, melted butter, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
- Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
- Gently fold in the chopped nuts, if using.
- Pour the batter into a greased and floured 9×5 inch loaf pan.
- Cover the pan with plastic wrap and let it rest at room temperature for 1-2 hours, or until slightly risen.
- Preheat your oven to 350°F (175°C).
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
