Description

A classic and hearty beef stew made easily in your slow cooker. Perfect for a cold day.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 pound potatoes, peeled and cubed

Instructions

  1. Toss beef cubes with flour, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Brown beef cubes on all sides.
  3. Transfer browned beef to your slow cooker.
  4. Add chopped onion, carrots, and celery to the slow cooker.
  5. Pour in beef broth and Worcestershire sauce. Stir in thyme and bay leaf.
  6. Cover and cook on low for 8-10 hours, or on high for 4-5 hours.
  7. Add cubed potatoes during the last 1-2 hours of cooking.
  8. Remove bay leaf before serving.

Notes

  • For a thicker stew, you can mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the stew during the last 30 minutes of cooking.
  • Adjust cooking time based on your slow cooker’s performance.
