			- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp soy sauce (for marinade)
- 1 tsp cornstarch (for marinade)
- 2 tbsp vegetable oil, divided
- 1 cup broccoli florets
- 1 red bell pepper, sliced
- 1 carrot, thinly sliced
- 2 cloves garlic, minced
- 1/4 cup soy sauce (for sauce)
- 1 tbsp honey
- 1 tsp sesame oil
- Cooked rice, for serving
Instructions
- In a bowl, marinate chicken with 1 tbsp soy sauce and 1 tsp cornstarch. Set aside for 10 minutes.
- Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry until cooked through and lightly browned. Remove chicken from skillet.
- Add the remaining 1 tbsp vegetable oil to the skillet. Add broccoli, bell pepper, and carrot. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
- Add minced garlic and stir-fry for 30 seconds until fragrant.
- Return chicken to the skillet.
- In a small bowl, whisk together 1/4 cup soy sauce, honey, and sesame oil. Pour sauce over chicken and vegetables.
- Stir and cook for 1-2 minutes until the sauce thickens and coats everything.
- Serve immediately over cooked rice.
Notes
- For a low carb option, serve without rice or with cauliflower rice.
- Feel free to add other vegetables like snap peas, mushrooms, or onions.
- Adjust sweetness and saltiness of the sauce to your preference.
