Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp soy sauce (for marinade)
  • 1 tsp cornstarch (for marinade)
  • 2 tbsp vegetable oil, divided
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, thinly sliced
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce (for sauce)
  • 1 tbsp honey
  • 1 tsp sesame oil
  • Cooked rice, for serving

Instructions

  1. In a bowl, marinate chicken with 1 tbsp soy sauce and 1 tsp cornstarch. Set aside for 10 minutes.
  2. Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry until cooked through and lightly browned. Remove chicken from skillet.
  3. Add the remaining 1 tbsp vegetable oil to the skillet. Add broccoli, bell pepper, and carrot. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  4. Add minced garlic and stir-fry for 30 seconds until fragrant.
  5. Return chicken to the skillet.
  6. In a small bowl, whisk together 1/4 cup soy sauce, honey, and sesame oil. Pour sauce over chicken and vegetables.
  7. Stir and cook for 1-2 minutes until the sauce thickens and coats everything.
  8. Serve immediately over cooked rice.

Notes

  • For a low carb option, serve without rice or with cauliflower rice.
  • Feel free to add other vegetables like snap peas, mushrooms, or onions.
  • Adjust sweetness and saltiness of the sauce to your preference.
