Amazing Salmon Loaf: 15-Minute Wonder

  • 2 cans (15 ounces each) salmon, drained and flaked
  • 1 cup breadcrumbs
  • 2 large eggs, beaten
  • 1/2 cup finely chopped onion
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 2 tablespoons chopped fresh dill

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a loaf pan.
  2. In a large bowl, combine the flaked salmon, breadcrumbs, beaten eggs, chopped onion, parsley, Dijon mustard, lemon juice, salt, and pepper. Add dill if using.
  3. Mix all ingredients gently until well combined. Do not overmix.
  4. Press the mixture evenly into the prepared loaf pan.
  5. Bake for 25-30 minutes, or until the loaf is firm and heated through.
  6. Let it rest for a few minutes before slicing and serving.

Notes

  • For a low-carb version, substitute almond flour or crushed pork rinds for breadcrumbs.
  • Serve with your favorite sauce, like tartar sauce or a lemon-dill aioli.
