- 2 cans (15 ounces each) salmon, drained and flaked
- 1 cup breadcrumbs
- 2 large eggs, beaten
- 1/2 cup finely chopped onion
- 1/4 cup chopped fresh parsley
- 2 tablespoons Dijon mustard
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: 2 tablespoons chopped fresh dill
Instructions
- Preheat your oven to 375°F (190°C). Grease a loaf pan.
- In a large bowl, combine the flaked salmon, breadcrumbs, beaten eggs, chopped onion, parsley, Dijon mustard, lemon juice, salt, and pepper. Add dill if using.
- Mix all ingredients gently until well combined. Do not overmix.
- Press the mixture evenly into the prepared loaf pan.
- Bake for 25-30 minutes, or until the loaf is firm and heated through.
- Let it rest for a few minutes before slicing and serving.
Notes
- For a low-carb version, substitute almond flour or crushed pork rinds for breadcrumbs.
- Serve with your favorite sauce, like tartar sauce or a lemon-dill aioli.
- This loaf can be made ahead and reheated.
