- 8 oz (225g) cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 to 1 1/2 cups powdered sugar (to taste)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Line a 10×15 inch jelly roll pan with parchment paper and lightly grease it.
- In a large bowl, beat the eggs and granulated sugar until thick and pale.
- Stir in the vanilla extract and red food coloring.
- In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.
- Gradually fold the dry ingredients into the egg mixture.
- Add the melted butter and buttermilk and gently mix until smooth.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 12-15 minutes, or until the cake springs back when lightly touched.
- While the cake is still warm, turn it out onto a kitchen towel dusted with powdered sugar.
- Peel off the parchment paper and roll the cake up in the towel from a short side. Let cool completely while rolled.
- Beat the softened cream cheese and butter together until smooth and creamy.
- Add the powdered sugar and vanilla extract, beating until fluffy.
- Carefully unroll the cooled cake and spread the cream cheese filling evenly over the cake.
- Roll the cake back up without the towel, wrapping it in plastic wrap and refrigerate for at least 1 hour before serving.
- Slice and serve chilled.
