  • 1 cup granulated sugar
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons red food coloring
  • 1/2 cup buttermilk (or regular milk with 1/2 tbsp vinegar)
  • 8 oz (225g) cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 to 1 1/2 cups powdered sugar (to taste)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 10×15 inch jelly roll pan with parchment paper and lightly grease it.
  2. In a large bowl, beat the eggs and granulated sugar until thick and pale.
  3. Stir in the vanilla extract and red food coloring.
  4. In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.
  5. Gradually fold the dry ingredients into the egg mixture.
  6. Add the melted butter and buttermilk and gently mix until smooth.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Bake for 12-15 minutes, or until the cake springs back when lightly touched.
  9. While the cake is still warm, turn it out onto a kitchen towel dusted with powdered sugar.
  10. Peel off the parchment paper and roll the cake up in the towel from a short side. Let cool completely while rolled.
  11. Beat the softened cream cheese and butter together until smooth and creamy.
  12. Add the powdered sugar and vanilla extract, beating until fluffy.
  13. Carefully unroll the cooled cake and spread the cream cheese filling evenly over the cake.
  14. Roll the cake back up without the towel, wrapping it in plastic wrap and refrigerate for at least 1 hour before serving.
  15. Slice and serve chilled.
