Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs and 1/4 cup sugar. Stir in melted butter until combined. Press mixture evenly into the bottom of a 9-inch springform pan.
  3. Bake crust for 8-10 minutes. Remove from oven and let cool.
  4. In a large bowl, beat cream cheese and 1 1/4 cups sugar until smooth.
  5. Beat in cinnamon, nutmeg, ginger, cloves, and salt.
  6. Add eggs one at a time, beating well after each addition.
