Ingredients

  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1/2 cup water
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1 tablespoon lemon juice

Instructions

  1. Combine pumpkin puree, granulated sugar, brown sugar, and water in a large pot.
  2. Stir in cinnamon, nutmeg, cloves, and ginger.
  3. Bring the mixture to a boil over medium-high heat, stirring constantly.
  4. Reduce heat to low and simmer, uncovered, for 1 to 1.5 hours, stirring occasionally, until thickened.
  5. Stir in lemon juice.
  6. Ladle hot pumpkin butter into sterilized jars, leaving 1/4 inch headspace.
  7. Wipe rims and secure lids.
  8. Process in a boiling water bath for 10 minutes.
