- 1 cup granulated sugar
- 1 cup packed brown sugar
- 1/2 cup water
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground ginger
- 1 tablespoon lemon juice
Instructions
- Combine pumpkin puree, granulated sugar, brown sugar, and water in a large pot.
- Stir in cinnamon, nutmeg, cloves, and ginger.
- Bring the mixture to a boil over medium-high heat, stirring constantly.
- Reduce heat to low and simmer, uncovered, for 1 to 1.5 hours, stirring occasionally, until thickened.
- Stir in lemon juice.
- Ladle hot pumpkin butter into sterilized jars, leaving 1/4 inch headspace.
- Wipe rims and secure lids.
- Process in a boiling water bath for 10 minutes.

- Ensure you use pumpkin puree, not pumpkin pie filling.
- Adjust spices to your preference.
- For a smoother consistency, you can blend the mixture before simmering.
- Properly canned pumpkin butter can be stored in a cool, dark place for up to a year.
