Ingredients

  • 15 oz pumpkin puree
  • 3 large eggs
  • 1.5 cups granulated sugar
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon ground cloves
  • 0.5 cup vegetable oil
  • Cream cheese frosting: 8 oz cream cheese, softened; 0.5 cup unsalted butter, softened; 4 cups powdered sugar; 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350F (175C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together pumpkin puree, eggs, and sugar.
  3. In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, ginger, and cloves.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Stir in the vegetable oil.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bars cool completely in the pan.
  9. While the bars cool, prepare the frosting: Beat softened cream cheese and butter until smooth. Gradually add powdered sugar, beating until fluffy. Stir in vanilla extract.
  10. Spread the cream cheese frosting evenly over the cooled pumpkin bars.
  11. Cut into bars and serve.

Notes

  • Ensure pumpkin puree is not pumpkin pie filling.
  • Do not overmix the batter.
  • Allow bars to cool completely before frosting for best results.
  • Store leftover bars in an airtight container in the refrigerator.
