  • 1 3/4 cups (220g) all-purpose flour
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1 cup (200g) sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (240ml) buttermilk
  • 1/3 cup (80ml) vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1 cup (180g) mini chocolate chips
  • Optional: crushed peppermint candies for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk the buttermilk, vegetable oil, egg, vanilla extract, and peppermint extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Fold in the mini chocolate chips gently.
  6. Divide the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.
  7. Optional: Sprinkle crushed peppermint candies on top of each muffin for extra minty crunch.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  9. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
