- 1/2 cup milk
- 1/2 cup (1 stick) unsalted butter
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 3 cups old-fashioned rolled oats
- 1/4 cup unsweetened cocoa powder (optional, for chocolate version)
Instructions
- Line two baking sheets with parchment paper.
- In a medium saucepan, combine sugar, milk, and butter. Bring to a rolling boil over medium heat, stirring occasionally.
- Boil for exactly 1 minute. Remove from heat.
- Stir in peanut butter, vanilla extract, and cocoa powder (if using) until smooth.
- Add the rolled oats and stir until well combined.
- Working quickly, drop spoonfuls of the mixture onto the prepared baking sheets.
- Let the cookies cool completely at room temperature until firm, about 30-60 minutes.
Notes
- For chocolate peanut butter cookies, add 1/4 cup unsweetened cocoa powder with the peanut butter.
- Ensure you boil the sugar mixture for exactly 1 minute for the correct consistency.
- These cookies are best stored in an airtight container at room temperature.
