Ingredients

  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • For the Frosting:
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup creamy peanut butter
  • 4 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream together softened butter and peanut butter until smooth.
  4. Gradually beat in granulated sugar until light and fluffy.
  5. Beat in eggs one at a time, then stir in vanilla extract.
  6. In a small bowl, whisk buttermilk.
  7. Add the dry ingredients and buttermilk alternately to the wet ingredients, beginning and ending with dry ingredients. Mix until just combined. Do not overmix.
  8. Divide batter evenly among prepared muffin cups, filling each about two-thirds full.
  9. Bake for 18-22 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  11. To make the frosting: In a large bowl, beat softened butter and peanut butter until smooth.
  12. Gradually add powdered sugar, alternating with milk, until the frosting reaches your desired consistency. Beat in vanilla extract.
  13. Once cupcakes are completely cool, frost them generously.

  • For a chocolate peanut butter variation, add 1/4 cup unsweetened cocoa powder to the dry ingredients and use chocolate frosting.
