Ingredients

  • 2 Mackerel fillets, about 6 oz each, skin on
  • 1 tablespoon Olive oil
  • 2 tablespoons Butter
  • 3 cloves Garlic, minced
  • 1 tablespoon Fresh Parsley, chopped
  • Salt, to taste
  • Black Pepper, to taste

Instructions

  1. Pat the mackerel fillets dry with paper towels. Season both sides with salt and pepper.
  2. Heat the olive oil in a skillet over medium-high heat.
  3. Place the mackerel fillets skin-side down in the hot skillet. Sear for 3-4 minutes until the skin is crispy.
  4. Flip the fillets and cook for another 2-3 minutes, or until cooked through. Remove the fish from the skillet and set aside.
  5. Reduce the heat to medium. Add the butter to the skillet.
  6. Once the butter is melted, add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
  7. Stir in the chopped parsley.
  8. Pour the garlic butter sauce over the pan-seared mackerel.
  9. Serve immediately.

  • Ensure your skillet is hot before adding the fish for crispy skin.
  • Do not overcook the mackerel; it should be flaky and moist.
