- 1 pound beef sirloin, thinly sliced
- 1 tablespoon olive oil
- 1 large onion, chopped
- 8 ounces mushrooms, sliced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups beef broth
- 1/2 cup sour cream
- 1/4 cup chopped fresh parsley
- 8 ounces egg noodles
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add beef and cook until browned. Remove beef from the pot and set aside.
- Add onion and mushrooms to the pot and cook until softened, about 5-7 minutes.
- Stir in garlic, paprika, salt, and pepper. Cook for 1 minute more until fragrant.
- Pour in beef broth and bring to a simmer.
- Return beef to the pot. Add egg noodles and stir to combine.
- Cover and simmer for 10-12 minutes, or until noodles are tender and sauce has thickened.
- Stir in sour cream and parsley. Serve immediately.
Notes
- For a richer flavor, you can use beef chuck instead of sirloin.
- Adjust the amount of sour cream to your preference for creaminess.
- Fresh dill can be used as a substitute for parsley.
- This dish can be made ahead and reheated.
