Ingredients

  • 1 pound beef sirloin, thinly sliced
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups beef broth
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh parsley
  • 8 ounces egg noodles

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add beef and cook until browned. Remove beef from the pot and set aside.
  3. Add onion and mushrooms to the pot and cook until softened, about 5-7 minutes.
  4. Stir in garlic, paprika, salt, and pepper. Cook for 1 minute more until fragrant.
  5. Pour in beef broth and bring to a simmer.
  6. Return beef to the pot. Add egg noodles and stir to combine.
  7. Cover and simmer for 10-12 minutes, or until noodles are tender and sauce has thickened.
  8. Stir in sour cream and parsley. Serve immediately.

  • For a richer flavor, you can use beef chuck instead of sirloin.
  • Adjust the amount of sour cream to your preference for creaminess.
  • Fresh dill can be used as a substitute for parsley.
