Description

These Mexican Hot Chocolate Cookies are a perfect blend of rich chocolate with a kick of cinnamon and cayenne pepper. They are soft, chewy, and make a wonderful holiday treat or gift.

  • 1/2 teaspoon salt

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and 1 3/4 cups granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together all-purpose flour, cocoa powder, baking soda, salt, 2 teaspoons ground cinnamon, and cayenne pepper.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the semi-sweet chocolate chips.
  7. In a small shallow bowl, combine 1/2 cup granulated sugar and 1 teaspoon ground cinnamon for rolling.
  8. Scoop dough by rounded tablespoons and roll each ball in the cinnamon-sugar mixture to coat.
  9. Place cookies 2 inches apart on prepared baking sheets.
  10. Bake for 9-11 minutes, or until edges are set but centers are still soft.
  11. Let cookies cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
