- 2 large boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped (preferably packed in oil)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 teaspoon red pepper flakes (adjust to taste)
- 1/2 cup grated Parmesan cheese
- 8 oz pasta (fettuccine, penne, or your choice)
- Fresh basil leaves, for garnish
- Optional: chopped parsley for garnish
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Season both sides of the chicken breasts with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes per side, or until cooked through and golden brown. Remove chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for about 1-2 minutes until fragrant.
- Pour in the heavy cream and chicken broth. Stir to combine. Add red pepper flakes and Parmesan cheese. Let the sauce simmer for 3-5 minutes until it thickens slightly.
- Slice the cooked chicken into strips, then add to the sauce along with the cooked pasta. Toss everything together to coat the pasta and chicken in the sauce.
- Garnish with fresh basil leaves and optional parsley. Serve immediately.
