  • 2 large boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped (preferably packed in oil)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1/2 cup grated Parmesan cheese
  • 8 oz pasta (fettuccine, penne, or your choice)
  • Fresh basil leaves, for garnish
  • Optional: chopped parsley for garnish

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Season both sides of the chicken breasts with salt and pepper.
  3. In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes per side, or until cooked through and golden brown. Remove chicken from the skillet and set aside.
  4. In the same skillet, add minced garlic and sun-dried tomatoes. Sauté for about 1-2 minutes until fragrant.
  5. Pour in the heavy cream and chicken broth. Stir to combine. Add red pepper flakes and Parmesan cheese. Let the sauce simmer for 3-5 minutes until it thickens slightly.
  6. Slice the cooked chicken into strips, then add to the sauce along with the cooked pasta. Toss everything together to coat the pasta and chicken in the sauce.
  7. Garnish with fresh basil leaves and optional parsley. Serve immediately.
