Amazing Mackerel Curry: 30 Minute Meal

Ingredients

  • 1 kg fresh mackerel, cleaned and cut into pieces
  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 green chilies, slit
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder (or to taste)
  • 400 ml coconut milk
  • 200 ml water
  • Salt to taste
  • Fresh cilantro, chopped, for garnish

Instructions

  1. Heat vegetable oil in a pan or pot over medium heat.
  2. Add chopped onion and sauté until softened, about 5-7 minutes.
  3. Add minced garlic, grated ginger, and slit green chilies. Cook for another minute until fragrant.
  4. Stir in turmeric powder, cumin powder, coriander powder, and red chili powder. Cook for 30 seconds, stirring constantly.
  5. Add the mackerel pieces to the pan and gently coat them with the spice mixture.
  6. Pour in the coconut milk and water. Bring to a simmer.
  7. Season with salt to taste.
  8. Cover and cook for 10-15 minutes, or until the mackerel is cooked through and the sauce has thickened slightly.
  9. Garnish with fresh cilantro before serving.

Notes

  • Adjust the amount of green chilies and red chili powder to your spice preference.
  • Serve hot with steamed rice or your favorite flatbread.
  • You can add other vegetables like tomatoes or bell peppers along with the onions.
