  • 8 oz elbow macaroni (about 2 cups)
  • 4 medium russet potatoes, peeled and diced
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 3 cups milk (whole milk preferred)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese (optional for extra cheesiness)
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 6 slices bacon, cooked and crumbled
  • 3 green onions, thinly sliced
  • 1 cup shredded cheddar cheese (for topping)
  • Optional: 1/4 cup grated Parmesan cheese (for topping)

Instructions

  1. Prepare the potatoes by boiling them in salted water until fork-tender, then drain and set aside.
  2. Cook the elbow macaroni in salted boiling water until al dente, then drain and set aside.
  3. In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1-2 minutes until bubbly, then slowly whisk in milk and cook until thickened.
  4. Remove from heat and stir in cheeses, garlic powder, onion powder, salt, and pepper until smooth.
  5. Combine boiled potatoes, macaroni, and sour cream into the cheese sauce gently. Stir in half of the bacon and green onions.
  6. Preheat the oven to 350°F (175°C). Transfer mixture to a greased baking dish, top with remaining cheese, and bake for 20-25 minutes until bubbly and golden.
  7. Garnish with remaining bacon and green onions before serving.
