Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons matcha powder
  • 1 tablespoon dried culinary lavender
  • 1/2 cup (1 stick) unsalted butter, softened (for frosting)
  • 3 cups powdered sugar (for frosting)
  • 1/4 cup milk (for frosting)
  • 1/2 teaspoon vanilla extract (for frosting)
  • 1/2 teaspoon dried culinary lavender, finely ground (for frosting)
  • Purple food coloring (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, salt, matcha powder, and dried lavender.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a soft dough forms. Do not overmix.
  6. Divide the dough in half. On a lightly floured surface, roll out one half of the dough to about 1/4-inch thickness.
  7. Cut out cookies using your desired cookie cutters. Place them on the prepared baking sheets.
  8. Bake for 8-10 minutes, or until the edges are lightly golden.
  9. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  10. To make the lavender frosting, in a medium bowl, beat the softened butter until creamy.
  11. Gradually add the powdered sugar, milk, vanilla extract, and finely ground lavender. Beat until smooth and fluffy. Add purple food coloring if desired.
  12. Once the cookies are completely cool, frost them with the lavender frosting.
  13. Optionally, garnish with a sprinkle of culinary lavender or matcha powder.
