- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, salt, matcha powder, and dried lavender.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined and a soft dough forms. Do not overmix.
- Divide the dough in half. On a lightly floured surface, roll out one half of the dough to about 1/4-inch thickness.
- Cut out cookies using your desired cookie cutters. Place them on the prepared baking sheets.
- Bake for 8-10 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- To make the lavender frosting, in a medium bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar, milk, vanilla extract, and finely ground lavender. Beat until smooth and fluffy. Add purple food coloring if desired.
- Once the cookies are completely cool, frost them with the lavender frosting.
- Optionally, garnish with a sprinkle of culinary lavender or matcha powder.
Notes
- Ensure your culinary lavender is food-grade and free from pesticides.
- For a stronger lavender flavor, you can infuse the milk for the frosting with lavender. Heat the milk with lavender, let it steep, then strain before using.
- Store cookies in an airtight container at room temperature for up to 3-4 days.
- Dough can be made ahead and refrigerated for up to 2 days or frozen for up to 1 month. Thaw in the refrigerator before rolling and baking.
