Amazing Instant Pot Minestrone Soup in 30 Min


Description

A quick and easy minestrone soup recipe for your Instant Pot. This hearty vegetable soup uses pantry staples for a flavorful meal in minutes.


Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 6 cups vegetable broth
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1/2 cup ditalini pasta
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (for garnish, optional)

Instructions

  1. Set your Instant Pot to ‘Sauté’ and add olive oil.
  2. Add onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. Stir in garlic, Italian seasoning, basil, oregano, and red pepper flakes (if using). Cook for 1 minute more until fragrant.
  4. Pour in vegetable broth and diced tomatoes. Scrape the bottom of the pot to remove any stuck bits.
  5. Add kidney beans and cannellini beans.
  6. Stir in the ditalini pasta.
  7. Secure the lid and set the vent to ‘Sealing’.
  8. Cook on High Pressure for 5 minutes.
  9. Once cooking is complete, perform a Quick Release of the pressure.
  10. Open the lid carefully. Season the soup with salt and pepper to taste.
  11. Serve hot, garnished with fresh parsley and Parmesan cheese if desired.

Notes

  • Adjust vegetables based on what you have on hand.
  • For a thicker soup, add a bit more pasta or let it simmer uncovered for a few minutes after cooking.
  • If you don’t have ditalini, any small pasta shape will work.
