  • 1/4 cup water
  • 1 teaspoon sesame oil
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, julienned
  • Cooked rice or noodles, for serving
  • Sesame seeds, for garnish (optional)
  • Green onions, chopped, for garnish (optional)

Instructions

  1. In a small bowl, whisk together honey, soy sauce, cornstarch, and water until smooth. Set aside.
  2. Heat olive oil in a large skillet or wok over medium-high heat.
  3. Add minced garlic and cook until fragrant, about 30 seconds.
  4. Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  5. Add broccoli florets, sliced red bell pepper, and julienned carrot to the skillet. Stir-fry for 3-5 minutes, until vegetables are tender-crisp.
  6. Pour the honey garlic sauce mixture into the skillet with the vegetables. Bring to a simmer and cook, stirring, until the sauce thickens, about 1-2 minutes.
  7. Return the cooked shrimp to the skillet and toss to coat with the sauce. Stir in sesame oil.
  8. Serve immediately over cooked rice or noodles, garnished with sesame seeds and chopped green onions if desired.
