Description

Ingredients

- 1 pound lean ground beef
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper (any color), chopped
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, avocado
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Add chopped onion and bell pepper to the skillet. Cook until softened, about 5 minutes.
- Stir in minced garlic, chili powder, and cumin. Cook for 1 minute more until fragrant.
- Add black beans and diced tomatoes (with their juice). Bring to a simmer.
- Reduce heat to low, cover, and cook for 5-7 minutes, or until heated through and flavors have melded.
- Season with salt and pepper to taste.
- Serve hot with your favorite toppings.
Notes
- For a spicier dish, add a pinch of cayenne pepper.
- Feel free to add other vegetables like corn or zucchini.
- This dish can be served over rice or quinoa for a more substantial meal.
