Amazing Healthy 20 Minute Ground Beef Skillet


Description

Ingredients

  • 1 pound lean ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper (any color), chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, avocado

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add chopped onion and bell pepper to the skillet. Cook until softened, about 5 minutes.
  4. Stir in minced garlic, chili powder, and cumin. Cook for 1 minute more until fragrant.
  5. Add black beans and diced tomatoes (with their juice). Bring to a simmer.
  6. Reduce heat to low, cover, and cook for 5-7 minutes, or until heated through and flavors have melded.
  7. Season with salt and pepper to taste.
  8. Serve hot with your favorite toppings.

Notes

  • For a spicier dish, add a pinch of cayenne pepper.
  • Feel free to add other vegetables like corn or zucchini.
