  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 lb ground beef
  • 2 tbsp all-purpose flour
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 lbs potatoes, peeled and quartered
  • 1/2 cup milk
  • 4 tbsp butter
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 8-10 minutes.
  3. Add ground beef to the skillet. Cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  4. Stir in flour and cook for 1 minute.
  5. Gradually stir in beef broth, Worcestershire sauce, and thyme. Bring to a simmer and cook until the sauce thickens, about 5 minutes. Season with salt and pepper.
  6. While the meat mixture simmers, boil the potatoes in salted water until tender, about 15-20 minutes. Drain well.
  7. Mash the potatoes with milk and butter until smooth and creamy. Season with salt and pepper.
  8. Spread the mashed potatoes evenly over the meat mixture in the skillet. Sprinkle with cheddar cheese, if using.
  9. Bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbly.
