Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (10.5 ounce) can condensed tomato soup
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large skillet, brown the ground beef with the onion over medium heat. Drain off any excess fat.
  3. Stir in the garlic, diced tomatoes, and tomato soup. Bring to a simmer.
  4. Stir in the cooked rice and half of the cheddar cheese. Season with salt and pepper.
  5. Pour the mixture into a greased 9×13 inch baking dish.
  6. Top with the remaining cheddar cheese.
