Instructions
- Preheat your grill to medium-high heat.
- Zest half of the lemon and set aside. Juice the entire lemon.
- In a small bowl, mix the olive oil, lemon juice, lemon zest, chopped dill, salt, and pepper.
- Place the mackerel fillets on a clean surface.
- Brush the lemon-dill mixture generously over both sides of the mackerel fillets.
- Place the mackerel fillets on the preheated grill.
- Grill for 4-5 minutes per side, or until the fish is cooked through and flakes easily with a fork.
- Serve immediately.
