Description

A classic French Onion Soup recipe featuring deeply caramelized onions and a rich beef broth, topped with crusty bread and melted Gruyère cheese.


Ingredients

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 4 large yellow onions, thinly sliced
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper, plus more to taste
  • 2 cloves garlic, minced
  • 6 cups beef broth
  • 1 cup dry white wine
  • 1 tablespoon fresh thyme leaves
  • 1 bay leaf
  • 4 slices crusty bread, about 1 inch thick
  • 8 ounces Gruyère cheese, grated

Instructions

  • Melt butter and olive oil in a large pot or Dutch oven over medium heat. Add sliced onions, sugar, salt, and pepper. Cook, stirring occasionally, until onions are softened and translucent, about 10-15 minutes.
  • Reduce heat to low, cover, and cook for 30-40 minutes, stirring every 10 minutes, until onions are deeply golden brown and caramelized.
  • Add minced garlic and cook for 1 minute more until fragrant.
  • Pour in the beef broth and white wine. Add thyme leaves and bay leaf. Bring to a simmer, then reduce heat to low and cook for at least 30 minutes to allow flavors to meld. Remove bay leaf.
  • Preheat broiler.
  • Ladle soup into oven-safe bowls. Place one slice of bread on top of each bowl of soup. Generously sprinkle Gruyère cheese over the bread.
  • Place bowls on a baking sheet and broil for 2-3 minutes, or until cheese is melted and bubbly and bread is toasted.

Notes

  • For a richer flavor, you can use a combination of yellow and sweet onions.
  • If you don’t have white wine, you can substitute with more beef broth or a splash of sherry vinegar.
