Ingredients
Scale
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup pumpkin puree
- 1/2 cup chopped pecans (optional)
- Cream cheese frosting (store-bought or homemade)
- Caramel drizzle (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a medium bowl, whisk together the flour, cinnamon, nutmeg, cloves, baking soda, and salt.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the pumpkin puree until smooth. If using, fold in the chopped pecans.
- Pour the batter evenly into the prepared baking pan.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool completely in the pan on a wire rack.
- Once cooled, frost the cake with cream cheese frosting.
- Drizzle with caramel sauce, if desired, before slicing and serving.
Notes
- For a healthier option, you can substitute some of the all-purpose flour with whole wheat flour.
- Ensure your pumpkin puree is not pumpkin pie filling, as it contains added sugar and spices.
- You can add a tablespoon of maple syrup to the batter for an extra layer of fall flavor.
