Delicious and easy pumpkin bars with a creamy frosting, perfect for fall.

- 15 oz pumpkin puree
- 3 large eggs
- 1/2 cup vegetable oil
- 1 cup granulated sugar
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup all-purpose flour
- For the Frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together pumpkin puree, eggs, and vegetable oil until smooth.
- Stir in granulated sugar, cinnamon, nutmeg, and cloves.
- In a separate bowl, whisk together baking soda and salt. Add to the pumpkin mixture.
- Gradually add flour, mixing until just combined. Do not overmix.
- Pour batter into the prepared pan and spread evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bars cool completely in the pan.
- While bars cool, prepare the frosting. In a medium bowl, beat cream cheese and butter until smooth.
- Gradually add powdered sugar and vanilla extract, beating until creamy and well combined.
- Spread frosting evenly over the cooled pumpkin bars.
- Cut into bars and serve.
Notes
- For a gluten-free version, substitute gluten-free all-purpose flour.
- Ensure pumpkin puree is not pumpkin pie filling.
- Adjust spices to your preference.
