Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together pumpkin puree, eggs, vegetable oil, and vanilla extract until well combined.
- Stir in granulated sugar.
- In a separate medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bars cool completely in the pan before frosting.
- For the frosting: In a medium bowl, beat softened cream cheese and butter until smooth.
- Gradually add powdered sugar and vanilla extract, beating until light and fluffy.
- Spread the frosting evenly over the cooled pumpkin bars.
- Cut into bars and serve.
