Ingredients

Scale
  • 15 oz pumpkin puree
  • 3 large eggs
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • For the Frosting:
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together pumpkin puree, eggs, vegetable oil, and vanilla extract until well combined.
  3. Stir in granulated sugar.
  4. In a separate medium bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the bars cool completely in the pan before frosting.
  9. For the frosting: In a medium bowl, beat softened cream cheese and butter until smooth.
  10. Gradually add powdered sugar and vanilla extract, beating until light and fluffy.
  11. Spread the frosting evenly over the cooled pumpkin bars.
  12. Cut into bars and serve.

Notes

  • Ensure your cream cheese and butter are at room temperature for the frosting to achieve a smooth consistency.
  • For extra flavor, you can add 1/4 cup chopped pecans or walnuts to the batter.
  • Store leftover bars in an airtight container in the refrigerator for up to 3 days.
