- 1 cup chopped mushrooms
- 1/2 cup breadcrumbs
Instructions
- In a large bowl, whisk together eggs, milk, salt, and pepper.
- Stir in cooked sausage, cheddar cheese, onion, bell pepper, and mushrooms.
- Pour mixture into a greased 9×13 inch baking dish.
- Sprinkle breadcrumbs evenly over the top.
- Cover and refrigerate overnight.
- Preheat oven to 350°F (175°C).
- Bake for 40-50 minutes, or until the center is set and the top is golden brown.
- Let stand for 5 minutes before serving.
Notes
- You can substitute bacon for sausage.
- Add your favorite vegetables like spinach or tomatoes.
- For a gluten-free option, omit breadcrumbs or use gluten-free breadcrumbs.
- This casserole freezes well. Let it cool completely, then wrap tightly and freeze for up to 3 months. Reheat in the oven at 300°F (150°C) until heated through.
