Description

This recipe makes a comforting chicken pot pie using your crockpot, perfect for an easy weeknight dinner.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 (10.5 ounce) can cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 (10 ounce) can refrigerated biscuit dough

Instructions

  1. Place chicken breasts in the bottom of your crockpot.
  2. In a medium bowl, whisk together cream of chicken soup, cream of mushroom soup, chicken broth, frozen mixed vegetables, poultry seasoning, black pepper, and garlic powder.
  3. Pour the soup mixture over the chicken in the crockpot.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and tender.
  5. Remove chicken from the crockpot and shred it using two forks. Return shredded chicken to the crockpot and stir to combine with the sauce.
  6. Increase crockpot heat to high (if not already on high).
  7. Open the can of biscuits and separate them. Place the biscuits on top of the chicken mixture in a single layer. You may need to overlap them slightly.
  8. Cover and cook for another 30-45 minutes, or until biscuits are golden brown and cooked through.
  9. Serve hot.

Notes

  • For a thicker sauce, you can add 1-2 tablespoons of cornstarch slurry (cornstarch mixed with a little cold water) during the last hour of cooking.
  • If you prefer a flakier crust, you can bake the biscuits separately according to package directions and add them to the pot pie just before serving.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
