This recipe makes a comforting chicken pot pie using your crockpot, perfect for an easy weeknight dinner.

- 2 lbs boneless, skinless chicken breasts
- 1 (10.5 ounce) can cream of chicken soup
- 1 (10.5 ounce) can cream of mushroom soup
- 1 cup chicken broth
- 1 cup frozen mixed vegetables
- 1 teaspoon poultry seasoning
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1 (10 ounce) can refrigerated biscuit dough
Instructions
- Place chicken breasts in the bottom of your crockpot.
- In a medium bowl, whisk together cream of chicken soup, cream of mushroom soup, chicken broth, frozen mixed vegetables, poultry seasoning, black pepper, and garlic powder.
- Pour the soup mixture over the chicken in the crockpot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and tender.
- Remove chicken from the crockpot and shred it using two forks. Return shredded chicken to the crockpot and stir to combine with the sauce.
- Increase crockpot heat to high (if not already on high).
- Open the can of biscuits and separate them. Place the biscuits on top of the chicken mixture in a single layer. You may need to overlap them slightly.
- Cover and cook for another 30-45 minutes, or until biscuits are golden brown and cooked through.
- Serve hot.
Notes
- For a thicker sauce, you can add 1-2 tablespoons of cornstarch slurry (cornstarch mixed with a little cold water) during the last hour of cooking.
- If you prefer a flakier crust, you can bake the biscuits separately according to package directions and add them to the pot pie just before serving.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
