  • 1.5 lbs boneless, skinless chicken breasts
  • 2 (10.5 oz) cans condensed cream of chicken soup
  • 1 (10.5 oz) can condensed cream of mushroom soup
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 2 (16.3 oz) cans refrigerated biscuit dough, cut into quarters
  • 1 cup frozen peas (optional)
  • 1 cup frozen carrots (optional)

Instructions

  1. Place chicken breasts in the bottom of a 6-quart or larger slow cooker.
  2. In a medium bowl, whisk together cream of chicken soup, cream of mushroom soup, chicken broth, milk, thyme, and pepper. Pour mixture over the chicken.
  3. Cover and cook on low for 6-8 hours, or on high for 3-4 hours.
  4. Remove chicken from the slow cooker and shred it using two forks. Return shredded chicken to the slow cooker.
  5. Stir in frozen peas and carrots, if using.
  6. Add the quartered biscuit dough pieces to the slow cooker, stirring gently to submerge them in the liquid.
  7. Cover and cook on high for an additional 30-45 minutes, or until the dumplings are cooked through and fluffy.
  8. Serve hot.
