- 2 pounds beef chuck roast, cut into 1-inch cubes
- 1 large onion, chopped
- 3 carrots, peeled and sliced
- 3 celery stalks, sliced
- 4 potatoes, peeled and cubed
- 4 cups beef broth
- 1/4 cup all-purpose flour
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and black pepper to taste
Instructions
- Toss beef cubes with flour, salt, and pepper.
- Place beef, onion, carrots, celery, and potatoes in the slow cooker.
- In a bowl, whisk together beef broth and tomato paste. Pour over the ingredients in the slow cooker.
- Add thyme and rosemary. Stir to combine.
- Cover and cook on low for 8-10 hours or on high for 4-5 hours, until beef is tender.
- Adjust seasoning before serving.
Notes
- For a thicker stew, you can mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the stew during the last 30 minutes of cooking.
- This stew can be made ahead of time and reheats well.
- Serve with crusty bread for dipping.
