Ingredients

  • 1 lb pike fillets, skinless and boneless
  • 1 cup panko breadcrumbs
  • 1/4 cup all-purpose flour
  • 1 large egg, beaten
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for frying

Instructions

  1. Cut the pike fillets into 1-inch pieces.
  2. In a food processor, pulse the pike pieces until finely ground.
  3. Transfer the ground pike to a bowl. Add panko breadcrumbs, flour, parsley, lemon zest, salt, and pepper. Mix well.
  4. Form the mixture into 8 small patties.
  5. Heat the olive oil in a large skillet over medium heat.
  6. Carefully place the pike cakes into the hot skillet.
  7. Cook for 4-5 minutes per side, until golden brown and cooked through.
  8. Serve immediately.
