- 1 lb pike fillets, skinless and boneless
- 1 cup panko breadcrumbs
- 1/4 cup all-purpose flour
- 1 large egg, beaten
- 2 tablespoons chopped fresh parsley
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil for frying
Instructions
- Cut the pike fillets into 1-inch pieces.
- In a food processor, pulse the pike pieces until finely ground.
- Transfer the ground pike to a bowl. Add panko breadcrumbs, flour, parsley, lemon zest, salt, and pepper. Mix well.
- Form the mixture into 8 small patties.
- Heat the olive oil in a large skillet over medium heat.
- Carefully place the pike cakes into the hot skillet.
- Cook for 4-5 minutes per side, until golden brown and cooked through.
- Serve immediately.
Notes
- For gluten-free fish cakes, use gluten-free breadcrumbs.
