Ingredients
1 lb ground beef (85% lean)
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon smoked paprika
1/2 teaspoon dried oregano
Salt and pepper, to taste
8–10 small corn or flour taco shells
1 cup shredded sharp cheddar cheese
1 cup shredded lettuce
1 medium tomato, diced
1/2 cup sour cream or Greek yogurt
Fresh cilantro, chopped (optional)
1 lime, cut into wedges
Instructions
Heat olive oil in a skillet over medium heat. Add diced onion and cook for 2-3 minutes until translucent. Add minced garlic and cook for 30 seconds. Increase heat to medium-high, add ground beef, and cook 5-7 minutes until browned. Drain excess fat if necessary. Sprinkle in cumin, chili powder, smoked paprika, oregano, salt, and pepper. Cook 2 minutes to blend flavors. Warm taco shells per package instructions. Assemble tacos with beef, cheese, lettuce, tomato, sour cream, cilantro, and a lime wedge.
Notes
Store leftover beef in an airtight container for up to 3 days. Assembled tacos stay fresh 1 day if refrigerated in airtight packaging. For extra crispiness, heat filled shells on a dry skillet before serving.
