Ingredients

- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 cans (28 ounces each) crushed tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup heavy cream
- 1/4 cup fresh basil leaves, chopped
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more, until fragrant.
- Stir in crushed tomatoes, vegetable broth, dried basil, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes, stirring occasionally.
- Carefully transfer soup to a blender or use an immersion blender to puree until smooth.
- Return soup to the pot and stir in heavy cream and fresh basil.
- Heat through gently, do not boil.
- Serve hot.
Notes
- For a vegan option, substitute the heavy cream with full-fat coconut milk.
- Adjust seasoning to your taste.
- Garnish with extra fresh basil or a drizzle of cream.
