Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 cans (28 ounces each) crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil leaves, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more, until fragrant.
  4. Stir in crushed tomatoes, vegetable broth, dried basil, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes, stirring occasionally.
  6. Carefully transfer soup to a blender or use an immersion blender to puree until smooth.
  7. Return soup to the pot and stir in heavy cream and fresh basil.
  8. Heat through gently, do not boil.
  9. Serve hot.
