Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 cup chopped yellow onion
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 cup egg noodles
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add diced chicken and cook until browned, about 5-7 minutes. Remove chicken and set aside.
  3. Add onion, celery, and carrots to the pot. Cook until softened, about 8-10 minutes.
  4. Stir in minced garlic and cook for 1 minute more until fragrant.
  5. Pour in chicken broth, dried thyme, and dried rosemary. Bring to a boil.
  6. Reduce heat, cover, and simmer for 15 minutes to allow flavors to meld.
  7. Add egg noodles and cooked chicken back to the pot. Cook until noodles are tender, about 5-7 minutes.
  8. Stir in heavy cream. Heat through, but do not boil.
  9. Season with salt and black pepper to taste.
  10. Ladle into bowls and garnish with fresh parsley.

Notes

  • For a thicker soup, you can create a slurry with 1 tablespoon of cornstarch mixed with 2 tablespoons of cold water and stir it into the soup after adding the cream.
  • Leftover soup can be stored in an airtight container in the refrigerator for up to 3 days.
  • You can use rotisserie chicken for a quicker preparation. Add it in step 7 with the noodles.
