 - 2 tbsp olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 (28 ounce) cans crushed tomatoes
- 4 cups vegetable broth
- 1 cup heavy cream (or coconut milk for vegan option)
- 1 tsp dried basil
- 1/2 tsp dried oregano
- Salt and pepper to taste
- Optional: croutons, fresh basil for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes.
- Stir in garlic and cook for 1 minute more until fragrant.
- Pour in crushed tomatoes and vegetable broth. Add basil and oregano. Bring to a simmer.
- Reduce heat and let simmer for at least 20 minutes to allow flavors to meld.
- Stir in heavy cream (or coconut milk). Heat through but do not boil.
- Season with salt and pepper to taste.
- Serve hot, garnished with croutons and fresh basil if desired.
Notes
- For a smoother soup, use an immersion blender or transfer to a regular blender after simmering and blend until smooth.
- Adjust seasonings to your preference.
- This soup can be made ahead of time and reheated.
