  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5-7 minutes.
  2. Stir in garlic and cook for 1 minute more until fragrant.
  3. Pour in crushed tomatoes and vegetable broth. Add basil and oregano. Bring to a simmer.
  4. Reduce heat and let simmer for at least 20 minutes to allow flavors to meld.
  5. Stir in heavy cream (or coconut milk). Heat through but do not boil.
