- 6 medium apples (about 3 pounds), peeled, cored, and sliced
- 3/4 cup granulated sugar
- 2 tablespoons all-purpose flour

- 1/8 teaspoon ground cloves
- 1 tablespoon lemon juice
- 2 tablespoons unsalted butter, cut into small pieces
- 1 egg, beaten (for egg wash)
- 1 tablespoon turbinado sugar (optional, for topping)
Instructions
- Preheat your oven to 425°F (220°C).
- On a lightly floured surface, roll out one disk of pie dough and carefully line a 9-inch pie plate. Trim the edges, leaving about a 1/2-inch overhang.
- In a large bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, and cloves. Add the lemon juice and toss gently to coat the apples evenly.
- Pour the apple mixture into the prepared pie crust. Dot the top of the filling with the small pieces of butter.
- Roll out the second disk of pie dough. Place it over the apple filling. Trim the edges, leaving about a 1-inch overhang. Fold the top crust edge under the bottom crust edge and crimp them together to seal. Cut several vents in the top crust to allow steam to escape.
- Brush the top crust with the beaten egg wash and sprinkle with turbinado sugar, if desired.
- Place the pie on a baking sheet to catch any drips. Bake for 15 minutes at 425°F (220°C).
- Reduce the oven temperature to 375°F (190°C) and continue baking for another 35-45 minutes, or until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, loosely tent it with aluminum foil.
- Let the pie cool on a wire rack for at least 2-3 hours before slicing and serving. This allows the filling to set.
