Instructions

  1. Preheat your oven to 425°F (220°C).
  2. On a lightly floured surface, roll out one disk of pie dough and carefully line a 9-inch pie plate. Trim the edges, leaving about a 1/2-inch overhang.
  3. In a large bowl, combine the sliced apples, granulated sugar, flour, cinnamon, nutmeg, and cloves. Add the lemon juice and toss gently to coat the apples evenly.
  4. Pour the apple mixture into the prepared pie crust. Dot the top of the filling with the small pieces of butter.
  5. Roll out the second disk of pie dough. Place it over the apple filling. Trim the edges, leaving about a 1-inch overhang. Fold the top crust edge under the bottom crust edge and crimp them together to seal. Cut several vents in the top crust to allow steam to escape.
  6. Brush the top crust with the beaten egg wash and sprinkle with turbinado sugar, if desired.
  7. Place the pie on a baking sheet to catch any drips. Bake for 15 minutes at 425°F (220°C).
  8. Reduce the oven temperature to 375°F (190°C) and continue baking for another 35-45 minutes, or until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, loosely tent it with aluminum foil.
