			- 1 lb boneless, skinless chicken breasts or thighs
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 cup chicken broth
- 1 cup mixed vegetables (e.g., carrots, peas, broccoli)
- 1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)
Instructions
- Cut chicken into bite-sized pieces.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes.
- Add garlic, thyme, and rosemary. Cook for 1 minute more until fragrant.
- Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Return chicken to the skillet. Add mixed vegetables.
- Cover and cook for 10-15 minutes, or until chicken is cooked through and vegetables are tender.
- If desired, stir in the cornstarch slurry and cook for 1-2 minutes until the sauce thickens.
- Season with salt and pepper to taste.
- Serve hot.
