Instructions

  1. Cut chicken into bite-sized pieces.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
  4. Add onion to the skillet and cook until softened, about 5 minutes.
  5. Add garlic, thyme, and rosemary. Cook for 1 minute more until fragrant.
  6. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  7. Return chicken to the skillet. Add mixed vegetables.
  8. Cover and cook for 10-15 minutes, or until chicken is cooked through and vegetables are tender.
  9. If desired, stir in the cornstarch slurry and cook for 1-2 minutes until the sauce thickens.
  10. Season with salt and pepper to taste.
  11. Serve hot.
