Description

  • 1 (9 inch) pre-baked graham cracker crust
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 cups milk
  • 2 large egg yolks, lightly beaten
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a medium saucepan, whisk together granulated sugar, cocoa powder, cornstarch, and salt.
  2. Gradually whisk in milk until smooth.
  3. Cook over medium heat, stirring constantly, until the mixture thickens and bubbles.
  4. Cook and stir for 1 minute more.
  5. Remove from heat. Stir in butter and vanilla extract until butter is melted and incorporated.
  6. Pour half of the hot pudding mixture into the lightly beaten egg yolks, whisking constantly.
  7. Pour the tempered egg yolk mixture back into the saucepan with the remaining pudding.
  8. Cook over medium-low heat, stirring constantly, until thickened, about 2 minutes. Do not boil.
  9. Pour the chocolate pudding into the prepared graham cracker crust.
  10. Cover the surface of the pudding directly with plastic wrap to prevent a skin from forming.
  11. Chill in the refrigerator for at least 3 hours, or until firm.
  12. In a separate bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  13. Spread or pipe whipped cream over the chilled pie before serving.
