Description
A classic and comforting homemade chicken noodle soup recipe, perfect for a simple, healing meal. This recipe is easy to make from scratch and can also be adapted for a slow cooker.

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts or thighs
- 1 large onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 8 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and freshly ground black pepper to taste
- 8 ounces egg noodles
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned on all sides. Remove chicken and set aside.
- Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Return chicken to the pot. Add chicken broth, thyme, and rosemary. Bring to a boil, then reduce heat and simmer for 20 minutes, or until chicken is cooked through.
- Remove chicken from the pot and shred it. Return shredded chicken to the pot.
- Add egg noodles and cook according to package directions.
- Season with salt and pepper to taste. Stir in fresh parsley before serving.
Notes
- For a slow cooker version, combine all ingredients except noodles and parsley in a slow cooker. Cook on low for 6-8 hours or high for 3-4 hours. Add noodles during the last 30 minutes of cooking.
- Feel free to add other vegetables like peas or corn.
