- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
- 1 cup chopped yellow onion
- 1 cup chopped carrots
- 1 cup chopped celery
- 8 cups chicken broth
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/2 cup egg noodles
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken pieces and cook until lightly browned, about 5-7 minutes. Remove chicken from the pot and set aside.
- Add onion, carrots, and celery to the pot. Cook until vegetables are softened, about 8-10 minutes.
- Pour in chicken broth. Stir in thyme and rosemary. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Return chicken to the pot. Add egg noodles and cook according to package directions, usually 7-10 minutes, or until tender.
- Season with salt and black pepper to taste.
- Ladle into bowls and garnish with fresh parsley, if desired.
Notes
- For extra flavor, you can use homemade chicken broth.
- Feel free to add other vegetables like peas or corn.
- Cook noodles separately and add them to individual bowls to prevent them from getting mushy if you plan on having leftovers.
