Description

This easy garlic parmesan chicken and potatoes recipe is perfect for a weeknight meal. Just dump the ingredients in your crockpot and let it cook.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1.5 lbs small red potatoes, quartered
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Spray the inside of your crockpot with non-stick spray.
  2. Place the quartered potatoes in the bottom of the crockpot.
  3. In a medium bowl, whisk together the chicken broth, Parmesan cheese, minced garlic, olive oil, Italian seasoning, salt, and pepper.
  4. Place the chicken breasts over the potatoes in the crockpot.
  5. Pour the Parmesan mixture over the chicken and potatoes.
  6. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the chicken is cooked through and the potatoes are tender.
  7. Shred the chicken with two forks directly in the crockpot, if desired.
  8. Garnish with fresh parsley before serving, if using.

Notes

  • For extra flavor, you can brown the chicken breasts in a skillet before adding them to the crockpot.
  • Adjust the amount of garlic and Parmesan cheese to your taste.
