  • Yield: Approximately 3 dozen 1x
  • Diet: Vegetarian

Description

Crispy, savory cheese straws made with cheddar cheese and a hint of spice. Perfect as an appetizer or snack.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1 cup (2 sticks) cold unsalted butter, cut into cubes
  • 2 cups shredded sharp cheddar cheese
  • 1 large egg, beaten
  • 1 tablespoon cold water

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, salt, and cayenne pepper.
  3. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  4. Stir in the shredded cheddar cheese until well combined.
  5. In a small bowl, whisk together the egg and cold water. Add this to the flour mixture and stir until a dough forms.
  6. Turn the dough out onto a lightly floured surface and gently knead a few times until it just comes together. Do not overwork the dough.
  7. Roll out the dough into a rectangle about 1/4 inch thick.
  8. Cut the dough into strips about 1/2 inch wide and 6 inches long.
  9. Place the strips onto the prepared baking sheet, twisting each strip once.
  10. Bake for 15-20 minutes, or until golden brown and crisp.
  11. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
