- 2 cups all-purpose flour
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1 cup (2 sticks) cold unsalted butter, cut into cubes
- 2 cups shredded sharp cheddar cheese
- 1 large egg, beaten
- 1 tablespoon cold water
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, salt, and cayenne pepper.
- Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- Stir in the shredded cheddar cheese until well combined.
- In a small bowl, whisk together the egg and cold water. Add this to the flour mixture and stir until a dough forms.
- Turn the dough out onto a lightly floured surface and gently knead a few times until it just comes together. Do not overwork the dough.
- Roll out the dough into a rectangle about 1/4 inch thick.
- Cut the dough into strips about 1/2 inch wide and 6 inches long.
- Place the strips onto the prepared baking sheet, twisting each strip once.
- Bake for 15-20 minutes, or until golden brown and crisp.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For gluten-free cheese straws, use a gluten-free all-purpose flour blend.
- Adjust cayenne pepper for desired spice level.
- These can be made ahead and stored in an airtight container.
