- 4 cups broccoli florets (fresh or frozen)
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup sour cream
- 1/2 cup milk
- 1 cup shredded cheddar cheese
- 1/4 cup chopped onion (optional)
- 1/4 teaspoon black pepper
- 1 cup crushed buttery crackers or breadcrumbs
- 2 tablespoons butter, melted
Instructions
- Preheat your oven to 375°F (190°C).
- Grease a 9×13 inch baking dish.
- If using fresh broccoli, blanch it in boiling water for 2-3 minutes, then drain. If using frozen, thaw it.
- In a large bowl, combine the cream of mushroom soup, sour cream, milk, shredded cheddar cheese, chopped onion (if using), and black pepper. Stir until well combined.
- Add the broccoli florets to the soup mixture and stir gently to coat.
- Pour the broccoli mixture into the prepared baking dish.
- In a small bowl, combine the crushed crackers or breadcrumbs with the melted butter.
- Sprinkle the buttered cracker or breadcrumb mixture evenly over the top of the casserole.
- Bake for 25-30 minutes, or until the casserole is bubbly and the topping is golden brown.
- Let it stand for a few minutes before serving.
Notes
- For a richer flavor, you can add a tablespoon of Dijon mustard to the soup mixture.
- Feel free to substitute cream of chicken or cream of celery soup for cream of mushroom.
- Other cheese options include Gruyere, Monterey Jack, or a blend of cheeses.
- For a healthier version, use low-fat soup, sour cream, and cheese. You can also omit the cracker topping or use whole wheat breadcrumbs.
